Recipe:
- 1/2 cup unsalted butter, softened
- 3/4 cup creamy peanut butter, unsalted and unsweetened
- 1/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract
- 3/4 cup Bob's Red Mill millet flour
- 1/4 cup tapioca flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Combine wet ingredients, then mix in dry ingredients and stir in chocolate chips. Refrigerate for 30 minutes, then bake at 350°F for 12-15 minutes.
