Recipe:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup creamy peanut butter, unsalted and unsweetened
  • 1/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3/4 cup Bob's Red Mill millet flour
  • 1/4 cup tapioca flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Combine wet ingredients, then mix in dry ingredients and stir in chocolate chips. Refrigerate for 30 minutes, then bake at 350°F for 12-15 minutes.
